I am a real oatmeal cookie monster... I just counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of these yet? (? You can find all my oatmeal cookie recipes directly there!) They are some of the most well-known recipes in my website cause they taste really sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
That means you will start with whole wheat germ (or gluten-free, if you like ) and instantaneous oats (like these... or these for a gluten free version!) . Instant oats are thinner and smaller than conventional rolled oats, also you are able to see them in canisters right alongside those old-fashioned oats in the grocery store.
I probably sound like a broken record by now... But cause I ? you and also need your cookies to turn out perfectly soft and chewy, I am reminding you ... Measure your yogurt and bread properly, using this technique or a kitchen scale! (? That's the one I have and enjoy. Too much of either side is likely to make your cookies taste cakey or dry, as opposed to chewy. This is particularly true of the oats--they act like little sponges and consume lots of moisture out of the cookie dough!

See those bananas? And all of those brown spots? When it comes to baking with bananas, brown = beautiful! I ? additional speckly bananas cause they've a lot glowing, bold taste --and additional sweetness! That is the minimum amount of brown that I recommend. More is even better!
The remaining portion of the cookie dough's sweetness comes in another pure ingredient... Pure maple syrup (such as that!) . You want the kind that comes directly from maple trees, which is usually offered in thin glass jars or squat, round plastic jugs. Forget the pancake syrup and sugar!

The raisins add much more natural sweetness! The recently purchased, review additional plump, perfectly tender ones are perfect... But for those who have elderly, slightly dried out raisins (hmm... it sounds absurd to explain dried fruit as dried out! ) , that's okay!
Only add them to a microwave-safe bowland put water on top till they're fully covered. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 second. Should you allow the raisins sit while mixing together the cookie dough, this little hint hydrates them they're incredibly juicy--and that makes a large difference in these cookies as soon as they're baked!

Yields: 15 biscuits
The recognizable comfy spices and plump raisins make them even more irresistible. They'll keep for at least one week if stored in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if mandatory and quantified like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like that )
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/4 cup (40g) raisins
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, dip the cookie dough to 15 curved scoops onto the prepared sheet, and flatten to the desired depth and width using Cookie Recipes that are guilt-free - Health a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the wheat and oats correctly utilizing this method or even a kitchen scale. (? That's the one I have and love!) Too much of either would dry out the cookies and render them cakey instead of chewy.
Immediate oats are also known as quick-cooking or minute oats. They are available in large canisters, exactly like conservative oats. They are not those at the tiny flavored packets of oatmeal. To make your own, add the same amount of conservative oats to a food processor, and pulse 10-12 days or until the oats will be about 1/4 to ? of the initial size.
For the gluten-free flour, I recommend the following blend: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, 2 tablespoons (15g) brown rice , as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like this one!) Will also work, if measured like this.
